3/4 cup butter 
3 cups sugar 
2/3 cup evaporated milk 
1 12 oz. package semi-sweet chocolate chips 
1 7oz jar marshmallow cream 
1 cup chopped nuts (optional) 
1 tsp vanilla 
Lightly grease or spray 13 X 9 pan 
Microwave butter on high for 1 minute or until melted 
Add sugar and milk, stir well 
Microwave on high for 5 minutes, stirring after 3 minutes. 
Mix well, scraping bowl. 
Microwave on high for 5 1/2 minutes, stirring after 3 minutes 
Gradually stir in chocolate chips until melted. 
Add remaining ingredients, mix well. 
Pour into pan, and cool at room temperature. 
Makes about 3 pounds. 

Sandy_in_IA Chinese Cabbage Salad
1 head cabbage, shredded 
1 (16 ounce) package broccoli coleslaw mix 
3 green onions, diced 
1 stalk of celery, chopped 
1 medium crown of broccoli, chopped 
3 medium carrots, chopped or shredded 
1 additional green onion, diced 
1/4 medium red pepper, chopped or shredded 
1/2 head of cauliflower 
6 tablespoons sugar 
2 teaspoons salt 
1 teaspoon black pepper 
5 tablespoons rice wine vinegar 
5 tablespoons sesame oil 
2 package lowfat (freeze-dried) ramen noodles, crumbled 
1/4 cup almond slivers, toasted (optional) 
Dice green onion stalks and set aside. Core and shred cabbage (if you want some color, use 1/4 head red cabbage and 3/4 head green cabbage). 
(To toast almond slivers, heat oven to 350 degrees, place in a single layer on a cookie sheet and bake until golden brown.) 
Combine sugar, salt, pepper, oil, and vinegar in a cruet and mix well, making sure sugar is dissolved. Chill if desired. 
Put shredded cabbage, green onions, toasted almonds, and crumbled ramen noodles into a large mixing bowl. Pour dressing over the salad and toss thoroughly to coat. Serve immediately. ((I poured the dressing over it and added the broken noodles a while before eating....it has a bit of a different taste when you do them both ways.)) 
MelanieIA Cauliflower Potato Salad. 
That's UnPotato Salad 
1 good, big cauliflower, cut into small chunks 
2 cups diced celery 
bell pepper (this wasn't in the original recipe) 
1 cup diced red onion (I use green onion) 
4 hard boiled eggs, chopped 
1 cups mayonnaise 
2tbsp cider vinegar 
1 teaspoons salt 
1 teaspoons Splenda 
1/4 teaspoon pepper 
First you'll need to cook your cauliflower. I cook mine in the microwave -- not 
only is it fast and easy, but there's some evidence that cooking vegetables in 
the microwave actually preserves more vitamins than cooking them on the stove 
top. I put the cauliflower in my biggest microwaveable casserole, added just a 
tablespoon or so of water, and covered it. Then I nuked it on "high" for seven 
minutes, and let it sit, covered, for another three to five minutes or so. This 
gave me cauliflower that was tender, but not mushy, which is the texture you're 
looking for, here. (You may steam your cauliflower instead, if you prefer. Don't 
boil it in lots of water; you pour most of the vitamins down the drain with the 
water.) Use the time that the cauliflower is cooking to dice your celery and 
onions! 
Drain the cooked cauliflower, and combine with the celery and onions -- you'll 
need a BIG bowl. Combine the mayonnaise, vinegar, salt, Splenda, and pepper, 
pour over the vegetables, and mix well. Mix in the chopped eggs last, and 
only stir lightly; this preserves some small hunks of yolk. Chill and serve. 
Sandy IA Breakfast Bake
1 pkg Jimmy Dean Sausage...cooked
1 bag of croutons
6 eggs
2 cups milk
1 cream of mushroom soup
Cheddar cheese

Line bottom of greased pan (NO larger than 9"x12") with croutons. Sprinkle cooked sausage over croutons. Beat eggs & milk in large bowl, until thoroughly mixed. Add remaining ingredients. Bake in a 350* oven for 1 hour. May be made ahead and refrigerate overnight. (Serves 8-12)

 

Sandy IA Pizza Pasta Salad
16 oz spiral pasta
12 Tb olive oil
2/3 c. grated Parm. Cheese
½ c red wine vinegar OR cider vinegar
Pizza spices
Garlic powder
Chopped peppers
2 cups cherry tomatoes
8 oz. cheddar cheese
8 oz. mozzarella cheese
1 cup sliced green onions
Sliced black olives
Sliced green olives
Pepperoni

Big can of Pork & Beans from Sam's Club
Drain off all the juice
Heat in cooker/oven/crockpot with enough Cookies Bar-B-Q sauce. 
Let cook at least 3 hours on low.
Sandy IA Apple Cake
1 box of White Cake mix
add the egg(s) & oil called for on the box
2 cups chopped up fresh frozen apples
enough juice and water added to make the amount called for on the box.
Bake as directed.
Waddles Fruit Kabobs with Margarita Dip
1/2 cup dairy sour cream 
1 (3 ounce) package cream cheese, cut up and softened 
1/4 cup sifted powdered sugar 
1 tablespoon tequila 
1 tablespoon orange juice concentrate 
1 tablespoon lime juice 
1/2 cup whipping cream 
angel and/or pound cake cubes 
assorted fresh fruit (strawberries, cubed melon, and/or seedless red or green grapes) ****we were served strawberries, grapes, cantaloupe, fresh pineapple with an angel food cake cube. 

Directions 
1 For margarita dip, place sour cream, cream cheese, powdered sugar, tequila, orange juice concentrate, and lime juice in a blender container or food processor bowl. Cover; blend or process until combined. Add whipping cream. Cover; blend or process until fluffy and mixture mounds. Serve immediately or cover and chill up to 24 hours. 
2 Secure fruit with grapes on each end and serve on a platter with the kabobs stuck onto a halved canteloupe with the skin side up. 
Serve with dip. 
Makes 1 and 3/4 cups 
Prep Time: 20 Minutes 
Ready in: 20 Minutes 

Hayjud_MN Honey Whole Wheat Sandwich Rolls 
1 & 1/4 c warm water 
1 T oil 
1 T honey 
1 T molasses 
1 egg 

Dry Ingred. 
3 c bread flour 
1 c Whole Wheat flour 
1 T Wheat Germ 
3/4 t salt 
1 T yeast (for bread machine or quick)(3 t is the same) 
Mix together dry ingredients in bowl. 
In Bread Machine put oil. 
In liquid measure with warm water stir in honey and molasses, then beat in egg. Just to mix it well, then pour into bread machine. Add dry ingred. and YEAST. 
Set on dough setting. While it is mixing check to see if it needs a little more flour (eggs vary in size) It should form a ball rather than sticking to the edges. Only add 1 T at a time. (It's not likely to need more than 2 T) 
When it is ready, flatten to 3/4 inch thick on a lightly floured board. Cut with 3 - 4 inch cutter (Using a cutter gives them higher sides) Place them on a lightly oiled cookie sheet. Spray the tops with PAM. Let it raise till they are at least double in height. Bake at 400* for only about 10 min (lightly golden) No more than 15 min. 

NON- Bread Machine 
Follow same mixing 
Knead on floured board till still moist, but no longer sticking to hands. Let Raise to about 1 1/2 the size, punch down and flatten, cut and bake. 
I've found that making without the bread machine takes less time (but you do the work.)
